A traditionally fermented sausage with a low pH for good shelf-life quality and a distinctively tangy taste. Our summer sausage is made of all beef and we prefer the time it takes for a natural fermentation for that characteristic old world flavor. The recipe has not changed in 50 years!

The same summer sausage for cheese lovers - Cheddar for a mild cheese or Jalapeno for those who like the extra heat.
Cervelat (a Beef and Pork Fermented Sausage)
Like our Summer Sausage, this product is fermented and has great keeping qualities. The pork and garlic give it a distinctively different taste than our summer sausage.
Smokey Beef Sticks (Beef Slims)
This is a fermented product like our Summer Sausage in an edible casing – great for bike rides or for traveling on the road
Peppered Beef
Both items are whole strips of meat that are not quite as dry as jerky. They are smoked and cooked very slowly for a tender bite!

This is the original German or Bavarian style cooked bratwurst that is not cured. Perfect for Oktoberfest or summer grill outs. Originally, they were fried to a golden brown in Germany, but they are mainly grilled in the United States. They have a lot less fat than raw bratwurst!

Smoked Meats:
All of our smoked meats are cured with a made-from-scratch recipe. We make sure that it is not too salty like many store bought products. We do not need all the salt for preservation since our products are not watered down! Meat flavor anyone?!
